Whole Wheat Margarita Pasta

Yields 8 servings


2 Packages Fresh Wheat Linguine

4 Chicken Breasts

1/4 C. Extra Virgin Olive Oil 

1-2 Cloves Garlic 

1 lbs. Grape Tomatoes (about 10-12 coarsely chopped)

1 C. Fresh Basil Leaves, Chopped 

1 Tsp. Salt 

1 Tsp. Sugar 

1/2 Tsp. Pepper 

1 C. Fresh Mozzarella, Cut Into 1/2’’ Cubes 

1/2 C. Grated Parmesan Cheese  


Cook pasta; set aside.

Cook chicken thoroughly; Slice; set aside.

In large skillet, heat oil and butter over low heat. Sauté the garlic until fragrant over low heat, about 1 minute. Add tomatoes, sugar, salt and pepper. Cover and cook for 10 minutes. Add basil, chicken and pasta to pan with tomatoes. Cook for 2-3 minutes, just until all pasta is heated through. Just before ready to serve, pour into serving bowl, toss with fresh mozzarella and grated cheese. Serve at once with additional grated cheese, if desired.
