Turkey Lettuce Wraps


Yields Approximately 4 Cups (8 Servings)


1 pkg. ground turkey (or ground chicken)

1 c. matchstix carrots

1 c. broccoli slaw (I subbed this in instead of mushrooms)

1/4 c. sliced almonds

2 tbsp. brown sugar

2 tbsp. ketchup

1 tbsp. white vinegar

3 tbsp. soy sauce

1/4 tsp. ground ginger (1tsp. if it's fresh)

3 green onions

Start by browning the meat and onions (mushrooms too if you added them), once meat is browned, add garlic, carrots, broccoli slaw and almonds. Mix well. Lastly, add brown sugar, ketchup, white vinegar, soy sauce and ginger (this is the yummy sauce!) Let simmer until sauce thickens slightly. Put on large leafs of lettuce, garnish with green onions and enjoy!! If you want more sauce, you can make a little extra on the side in another pan for dipping!

**Might seem like a lot of fat for a 1/2 cup, however, remember it's good fat (comes from the turkey and almonds only!) If you want lower fat content, use leaner turkey (I used 85/15 and will use 93/7 next time)!
