Healthy Morning Muffins

Yields Approximately 12 Muffins (12 servings)


1 1/4 c. Whole wheat flour

1/2 c. Packed brown-sugar 

1/2 tsp. Baking Powder 

1/2 tsp. Baking Soda 

1/2 tsp. Ground nutmeg

1 tsp. Cinnamon 

1/2 tsp. Salt

1 c. Oats

1/2 c. Raisins 

3 tbps. Vegetable oil

1 egg

1/3 c. Almond milk 

1/2 c. Matchstick carrots

1 Medium ripe banana, mashed


Preheat oven to 400 degrees. Coat muffin pan with non-stick cooking spray.  In a large bowl whisk together flour, brown sugar, baking powder, baking soda, nutmeg, cinnamon, and salt until there are no lumps. Stir in oats and raisins; add oil, egg, milk, carrots and banana. Stir until blended.  Bake approximately 18 min or until toothpick inserted in center of muffin comes out clean.  Enjoy!
